The College of Applied Science and Technology (CAST) at Illinois State University is celebrating its 50th anniversary this year. Today #CAST50 brings you Caroline Bubulka, MS, RD, LDN, CLC, a two-time FCS alumna.

What was your major and when did you graduate from Illinois State University?

I received my bachelor’s degree in Family and Consumer Sciences in the Food, Nutrition, and Dietetics sequence in 2013. Then, I went on to complete the master’s degree in Family and Consumer Sciences and Dietetic Internship in May 2015.

Tell us about your career now and how you got to where you are today. Do you have any ultimate career goals?

I am a registered dietitian, and I work in the WIC Clinic at McLean County Health Department. I started working there in June 2015, shortly after I graduated. WIC is The Special Supplemental Nutrition Program for Women, Infants, and Children. Every day, I provide nutrition education for this population. WIC promotes breastfeeding, and this year I became a Certified Lactation Counselor. McLean County’s WIC Clinic is also a rotation site for ISU’s Dietetic Internship, and I serve as a preceptor for the interns during their rotation at WIC.

Best piece of advice you ever received?

“In the end, we only regret the chances we didn’t take.”

Favorite homemade meal either now or growing up? Would you consider yourself a chef or a baker?

My favorite homemade meal is lasagna. When I make it myself, I always use lean ground meat, whole grain noodles, and vegetables. Being a dietitian, I frequently try to make healthier recipes. My roasted Brussels sprouts recipe has become a staple at my family gatherings at Thanksgiving and Christmas! I enjoy cooking and baking, but I would not consider myself a chef or baker. As a student, I worked for ISU’s catering services at Campus Dining. I really admire all that the catering chefs do, and there’s no way I compare to them!

Advice for current students?

Give 100 percent effort in everything you do.
