At least try them! Dr. Gina Hunter, professor of anthropology and director of the Office of Student Research at Illinois State University, will give a talk at Milner Library on Tuesday, September 12, at 3 p.m. on her book Edible Insects: A Global History.
Edible Insects highlights stories of traditional methods of insect collection, preparation, consumption, and preservation. It also explores the role of world-class chefs in making insects palatable to consumers in the West. The book includes recipes for beetles, butterflies, grasshoppers, grubs, and more. Dr. Hunter will also discuss where disgust in the West around the concept of eating bugs might originate, when an estimated two billion people around the world regularly consume insects. The talk will be followed by a Q&A, as well as a tasting of a variety of edible insects. Refreshments will be provided as well, for those less ento-curious.
The event and following reception will be located in the speaker’s corner on floor 6 of Milner Library—all are welcome.
